A great complement for a slice of beef roast, this sauce combines French-style mustard, shallots, sour cream and lemon juice.

Lemon-Mustard Sauce

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons finely chopped shallots
  • 2/3 cup reduced-fat dairy sour cream
  • 1/3 cup Dijon-style mustard
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat oil in small saucepan over medium heat.  Add shallots; cook and stir about 2 minutes or until tender.  Remove from heat; cool 1 minute.

  2. Stir in remaining ingredients.  Serve warm.
